Chicken: leg and thigh or chicken breast USDA Grade A. Portions must be consistent for 2 ounces <br />edible meat without skin or bones plus one complementary protein. Or the chicken leg and thigh or <br />chicken breast must yield 3 ounces edible meat. <br />Pork chop: center or rib cut, 1 /4" fat trim. <br />■ Liver: must be calves liver, proportioned, skinned, 4 -ounce raw weight. <br />VEGETABLE /FRUIT CATEGORY - Each meal shall contain 2 servings of different fruit and /or <br />vegetables. A serving consists of 1/2 cup canned fruit (drained) or 1/2 cup cooked vegetable (drained), <br />1 piece of fresh fruit or 6 oz. 100% fruit juice (orange, grapefruit or orange - grapefruit or other 100% <br />fruit juice fortified with vitamin C to meet one -third recommended dietary allowances for vitamin C or <br />vitamin C fortified cranberry juice cocktail), 1/2 cup coleslaw or 1 cup tossed mixed fresh vegetable <br />salad.
