A <br />survey ofpart/cipanm should be done at least once per year m solicit menu <br />suggestions and to determine client satisfaction. <br /> <br />Menu Planning Requirements <br /> <br />.Each mca] served shall conmln at lc~t one-third of thc current Holly <br />R~commended Dietary 'Allowances as established by the Food.and Nutrition <br />Board, National. Academy of Science, National Research Council and comply <br />with U.S. Die.tory GuideLines. Portion~ 8fmeals or snacks may not be counted <br />even when such snacks cumulatively equal one,third o£the daily Recommended' <br />Dietary AlloWances. <br /> <br />Agencies providing cong-regatc nutrition .scrv/ces must use and,follow thc "Menu <br />Pattern" below: <br /> <br />Ail foods must be idcmtific.d .in order to calculate nutrient value. <br />The method of food preparation shall be specified for all meat. items. <br />Calorie content must be a minimum of 700 calories per meal. <br /> <br />Meals should al~o m~t the following specifications! The fat' content should be no. <br />more than 30% of total calorics. The sodium content of the meal should fall <br />within the range of 3 grams of sodium chloride per day or 1,000 milligrams <br />sodium. No more than one meal per 20 day' cycle should exceed 1,000 milligrams · <br />sodium. <br /> <br />1. Of this, fourtmn'grams must be a "complete protein" in <br />thc form of 2 om edible mcat, fish or poultry, exclusive of fat, <br />bone, or gristle. Qne-hatf cup cooked drained dried beans,.peas, or <br />lentils may be used as a substitute for 1 'oz. of meat. One cup of <br />dried beans may be used twice'in one 20 day cyctc as a'substitute <br />for 2 oz. mcat; however, a "complcmentarT" protein ~ource must <br />be served ar the same m~al with the 1 cup dr/ed beans in order to <br />serve a complete protein'(i.e., flee, corn, or combread).
