When r~cipe ingrediants are changed, the recipe must be <br />re-submitted for approval. <br /> <br />· All prepared or breaded meat items or mea! in combination <br /> must be specified on the menu. The bidder receiving the food <br /> bid mu.st obmi~ and submit a Certificate of Compliance fi'om <br /> the manufacturer for each item to be included on the meat <br /> category. Only approved brands may be used in ~he meat <br /> category. Exarople: Holly Farms Chicken would prepare the <br /> certificate of compliance for chicken nuggets, and the <br /> certificate would be submitted by the bidder receiving the bid. <br />· Fresh and frozen vegetables should be used as much as <br /> possible. When c~nned vegetables are used, salt should not be <br /> added. <br />· Thc form of vegetable or fi~t used (flesh, flezen, dried, or <br /> canned) must be indicated on the menu for nutrient analysis. <br />· Vegetable protein products am allowed by the Food and <br /> Nutrition Service (FNS), USDA, to be used in meat mi~u'es <br /> up to a maximum of thirty percent (30%). Seventy percent of <br /> the ingredients in the meat mix-mm must be meat. <br />· Vegetable protein extended products may be used one time per <br /> week and must be noted on the menu. A copy of the Certificate <br /> of Compliance shall be filed with the menus. <br /> <br /> <br />
