If we use the FY90 food bid prices and multiply it times
the numbers of meals we are currently serving we can make some
valid comparisons between what the food service is accomplishing
and also what the increase in daily population in the jail would do
to contract costs verses jail food service costs.

Breakfast 40,885 X $1.29 =
Lunch 41,049 X $2.50 =
Dinner 40,299 X $2.50 =
Total =

$ 52,741.65
$102,622.50
$100~747.50
$256,111.65

Cost if had $6.29 Food Contract $256,111.65
Actual Food Service Cost FY93 -$207~202.56

Estimated Real Savings FY93

$48,909.09

During FY93 the Jail Food Service fed an average of 111.63
inmates 3 meals per day at an average daily food cost of $1.9335
per day or an average cost of $.6445 per meal.

At the end of FY92 we used the same basis for figuring
food, labor, and estimated costs if we had the $6.29 food contract.
The resulting savings last year was $68,711.78. The savings for FY
93 is $48,909.09. This is a difference of $19,802.69 less savings
this year.

Due to the decreased numbers of inmates being housed this
year in comparison to the average of 117.72 last year and some
increase in food and labor costs the savings was less this year
than last year. $48,909.09 is still a significant savings for the
citizens of Cabarrus County.

I am extremely pleased with the operation of the Jail Food
Service Division. It has performed beyond my expectations in the
area of actual cost savings for the citizens of Cabarrus County and
has significantly decreased the problems we had with outside food
vendors. It is very important that we control our food content,
temperature at serving time and quality of product. This can only
be accomplished by having an in-house food service.

Another very important part of the jail operation is the
housing of State Sentenced Inmates and Federal Pre-trial
Detainee's.

! During FY93 the Cabarrus County Jail generated $209,134.43 in
evenue for the jail by housing up to 20 Federal Pre-Trial
etainee's per day. Of this amount $6,099.43 was for the
eimbursement of expenses incurred for medical care given to the
inmates.

/ During FY93 the Cabarrus County Jail generated $110,840.20 in
/ revenue for the housing of sentenced State prisoners. Of this
amount $9,935.70 was for medical care reimbursement.
