the numbers of meals we are currently serving we can make some <br />valid comparisons between what the food service is accomplishing <br />and also what the increase in daily population in the jail would do <br />to contract costs verses jail food service costs. <br /> <br />.Breakfast 42,797 X $1.29 = $ 55,208.13 <br />Lunch 43,227 X $2.50 = $108,067.50 <br />Dinner 42,881 X $2.50 = $107r202.50 <br /> Total =' $270,478.13 <br /> <br />Cost if had $6.29 Food Contract $270,478.13 <br />Actual Food Service Cost FY92 -$201r766.35 <br /> <br />Estimated Real Savings FY92 <br /> <br />$68,711.78 <br /> <br /> During FY92 the Jail Food Service fed an average of 117.72 <br />inmates 3 meals per day at an average daily food cost of $1.8743 <br />per day or an average cost of $.62479 per meal. <br /> <br /> At the end of FY91 we used the same basis for figuring <br />food, labor, and estimated costs if we had the $6.29 food contract. <br />The resulting savings last year was $54,912.03. The savings for FY <br />92 is $68,711.78. This is a difference of $13,799.75 more savings <br />this year. <br /> <br /> DUe t° the~increased!numbers of inmates'being housed this <br />year in comparison to the average of 102.96 last year we added a <br />part-time cooks helper to the Food Service labor cost. We still <br />gained a significant savings for the citizens of Cabarrus County. <br /> <br /> I am extremely pleased with the operation of the Jail Food <br />Service Division. It has performed beyond my expectations in the <br />area of actual cost savings for the citizens of Cabarrus County and <br />has significantly decreased the problems we had with outside food <br />vendors. It is very important that we control our food content, <br />temperature at serving time and quality of product. This can only <br />be accomplished by having an in-house food service. <br /> <br /> Another very important part of the jail operation is the <br />housing of State Sentenced Inmates and Federal Pre-trial <br />Detainee's. <br /> <br /> During FY92 I was able to negotiate an increase in the <br />Federal Pre-Trial Detainee daily rate for housing the prisoners. <br />We increased the rate from $26.00 to $35.00 per day retroactive <br />back to November 1991. This allowed the Cabarrus County Jail to <br />generate $205,096.50 in revenue for the jail. Of this amount <br />$13,937.28 was reimbursement for medical care given to the inmates. <br /> <br /> During FY92 the Cabarrus County Jail generated $75,520.62 in <br />revenue for the housing of sentenced State prisoners. Of this <br />amount $10,932.62 was for medical care reimbursement. As of July <br />1, 1992 the State owes Cabarrus County approximately $29,003.62 in <br /> <br /> <br />
