Reference #2
■ Food quality was terrible, described as "mystery meat ".
• They used to serve a hot dog and a slice of white loaf bread instead of a bun because it was
cheaper and technically met the nutritional requirements.
• It was all about the bottom line — no regard to food quality or service.
• They serve no more than they have to. We had to meet, demand and argue to get things
changed.
• Substitutions were taking place all the time without prior approval.
• They use a lot of fillers in their recipes.
• We had multiple letters to the editor and the participants boycotted the program for a while
before they made the personnel changes.
• They got rid of a couple of key employees and it has gotten better.
• They listen to us now and they will make adjustments.
■ They serve too much chicken and the menus are real repetitive — if peaches are cheaper than
other fruit — we will get peaches all of the time — just like chicken.
Davie County Department of Aging
■ Only been with them since May 2011.
• Food was really good early, but they awarded them a new contract for FY2012 and the food
quality has not been as good.
• Food counts have been incorrect — but they are only five minutes away and they usually take
care of the shortages quickly.
■ They seem to be cutting corners.
• Frequently have shortages.
• County is working without a contract because Aramark will not agree with the terms in the
contract that they have always used. Aramark corporate rewrote the contract and submitted
their version which "clearly contradicted" the specification that were in the bid package.
• Dealing with corporate is completely different than working with the local management.
Corporate is only interested in money but thinks the local staff will be okay to work with. It is
still early in their relationship.
■ When complained about food quality and quantity the local representatives told us to let them
get settled in and when corporate was out of it they would do whatever they needed to do to
address the concerns of Davie County Senior Services.
Union County
■ We were unable to get a response and reference from Union County.
Stanley County
• Just extended for two years, Aramark was the only vendor to respond to bid.
• Participants were used to home cooked meals from hospital, but now receiving "mystery meat"
from Aramark — poor quality of meat; told good quality costs more.
Attachment number 1
G -2 Page 156
