in scaling, it would be prudent to pursue this project in tandem with the
development of one or more producer collaborations and/or food
entrepreneurs who can develop a wholesale aggregation program that focuses
on volume and also to focus county resources directly on promotion of local
beef.
Investigate and encourage participation in regional marketing initiatives
— the County should continue its investigation of regional and national models
for scaling local food and farming businesses. Much can be learned from
others' experiences. In the case of meat, models include: Hickory Nut Gap
Meats (Asheville), Farmhand Foods (Durham), Good Natured Family Farms
(Kentucky), Lorentz Meats and 1,000 Hills Cattle Co (Minnesota). In
addition, opportunities exist for Cabarrus farmers to participate in regional
marketing programs as a means of scaling their businesses. For example, for
those interested in or already raising grass -fed beef, they could consider
participating in the Hickory Nut Gap Meats producer network. This would
provide an interim means of increasing production to prepare for the Cruse
facility and locally -led beef marketing programs.
5
Attachment number 1
1 -1 Page 240
