• Consumption
All the activities and processes that individuals, society and culture engage in to acquire
(e.g. purchase, strategize, manage, ingest, digest) and use (e.g. cook, ritualize, present)
food that has been produced and distributed. This includes home kitchens.
• Waste Management
The series of activities where discarded food materials are collected, sorted, processed
and converted into other materials and used in the production of new products. This
includes backyard composting, large -scale composting, edible food waste recovery,
recycling, and land - filling.
III. Assessment Methodology
Food system assessments have been used across the country to analyze community
concerns related to food. The methodology used in this project is based on previously
conducted assessments! We designed this assessment to provide baseline data related to
different segments of the system and how they function. The data will be collected
through a review of secondary data sources, focus groups and interviews with food
system stakeholders. Results will be analyzed to identify connections between system
elements and to outline strengths and weaknesses within the system.
The assessment will be conducted in two phases so we can modify, as needed, the scope
and focus of data collection and presentation. Phase I will examine secondary data related
to agricultural production in Cabarrus County and the surrounding region. Phase II will
gather more detailed data related to the components of the Cabarrus County food system
through focus groups and telephone and in- person interviews with food system
stakeholders. A third component that uses surveys to capture consumers' opinions as they
relate to local food may be designed during Phase H.
Finally, a comprehensive view of the Cabarrus food system and its impact on County
citizens should include information related to health, nutrition, and food security.
Gathering meaningful data related to these topics would involve gathering primary data
related to food access, affordability, and availability.
Assessments reviewed include A Food Systems Assessment For Oakland, Ca: Toward A Sustainable
Food Plan, 2006; Sowing the Seeds: The Promise of Local Food Systems in Southeast Central NC, 2008;
Growing Local: Expanding the Western NC Food and Farm Economy, 2007; and Local food System
Assessment for Northern Virginia, 2010.
4
Attachment number 2
G -4 Page 513
