sCabarrus County
heriff's Department
Robert M. Canaday, Sheriff

MEMORANDUM
TO:

FROM:

SUBJECT:

July 25, 1995

Mr. Jeff Barnhardt, Chairman
Cabarrus County Board of Commissioners
Concord North Carolina

Sheriff Robert M. Canaday ~

REPORT ON JAIL FOOD SERVICE
FISCAL YEAR 1995

The Cabarrus County Jail Food Service operated the entire
fiscal year. It operated 7 days per week during the year.

During the 52 weeks of operation during FY95 the Food
Service served the following numbers of meals:

Breakfast 40,895

Lunch 40,740

Dinner 40,395
Total Meals Served 122,030

Total Food cost was $84,560.14

Total Labor Cost (Salaries & Benefits) was $137,611.97

Total Labor + Food Cost for FY95 is $222,172.11

We do not have a current private contractor bid price to
use for comparison purposes, nor could we get a valid bid. The
last bid we took on the food for the jail was in late June of 1989
prior to opening the Jail Food Service. This bid was for a total
of $6.29 for the three meals delivered to the jail. The breakdown
was $1.29 for breakfast, $2.50 for lunch, and $2.50 for dinner.
(The price we were paying for the three meals at that time was
$6.91).

I doubt very seriously if we could get a bid as low as this
today if we had to bid the food out and if we did I would be very
concerned about the quality of the food items they would be
providing.

P.O.
