If we use the FYg0 food bid prices and multiply it times
the numbers of meals we are currently serving we can make some
valid comparisons between what the food service is accomplishing
and also what the increase in daily population in the jail would do
to contract costs verses jail food service costs.

Breakfast 40,895 X $1.29 = $ 52,754.55
Lunch 40,740 X $2.50 = $101,850.00
Dinner 40,395 X $2.50 = $100,987.50
Total = $255,592.05

Cost if had $6.29 Food Contract $255,592.05
Actual Food Service Cost FY95 (Labor + Food)-$222,172.11

Estimate4 Real Savings F¥95

$33,420.17

During FY95 the Jail Food Service fed an average of 111.44
inmates 3 meals per day at an average daily food cost of $2.076 per
day or an average cost of $.692 per meal.

At the end of FY94 we used the same basis for figuring
food, labor, and estimated costs if we had the $6.29 food contract.
The resulting savings last year was $44,752.72. The savings for FY
95 is $33,420.17. This is a difference of $11,332.55 LESS savings
this year.

We had a decreased number of inmates being housed this year
(111.44) in comparison to the average of 119.39 last year and some
increase in food costs resulted in the savings being less this year
than last year. $32,397.17 is still a significant savings for the
citizens of Cabarrus County.

I amextremely pleased with the operation of the Jail Food
Service Division. It has performed beyond my expectations in the
area of actual cost savings for the citizens of Cabarrus County and
has significantly decreased the problems we had with outside food
vendors. It is very important that we control our food content,
temperature at serving time and quality of product. This can only
be accomplished by having an in-house food service.

Another very important part of the jail operation is the
housing of State Sentenced Inmates and Federal Pre-trial
Detainee's. Due to our periodic increases in daily inmate
population we have suspended the housing of federal prisoners for
the time being.

During FY95 the Cabarrus County Jail generated $168,677.63 in
revenue and medical reimbursement for the housing of sentenced
State prisoners.

This represents a increase of $48,560.63 in fees over FY94 which
was $120,117.00.
