<br />Each meal provided by the Caterer must furnish one-third (1/3) of
<br />the daily Rec~_nded Dietary Allowance for adults over age
<br />fifty-one detailed in Schedule "C" and must conform to the meal
<br />pattern described in the North Carolina Division of Aging
<br />Services Definitions and Star~tnrds incorporated herein as
<br />Schedule "C".
<br />
<br />The "official FY '93 "Approved Menus", which were included in the
<br />Bid Package, are to be served as specified throughout the contract
<br />year. These menus include five holiday meals, emergency shelf
<br />stable meals, picnic meals. Emergency meals may be request~ by
<br />the Program depending on availability of funds. Picnic meals will
<br />be requested for special events.
<br />
<br />In addition, the meals provided by the Caterer must be prepared
<br />according to the following additional specifications:

<br />
<br />Bccf, Lamb, Veal, Grade USDA Choice.
<br />Poultry, USDA, Grade A.
<br />Pork, Grade U.S. No. 1.
<br />Bccf, ground USDA Choice, 80% lean, 20% fat, no. T.V.P.
<br />Bccf Patties, USDA Choice, 80% lesn, 20% fat, 4 oz. raw weight,
<br /> no T.V.P.
<br />Eggs, USDA, Grade A.
<br />Beef Stew, USDA Choice, cubed 1". (Meat Balls are not acceptable
<br /> for Beef and Vegetnhle Stew. )
<br />Franks, all ~cf, 10/lb., no colored casing. Two franks shall be

<br />Franks, d~nner, all ~f, 4 oz. each, 1 per serving, no colored
<br />
<br />Breaded, flaked and/or molded meat items must yield 3 oz. cooked
<br /> weight excluding bre~d~ng and fat.
<br />Fish, packed under continuous USDA inspection, Grade A. Turbot
<br /> is not acceptable.
<br />Ch/cken, let and thigh, USDA Grade A, to yield 3 oz. cooked
<br /> edible portion, excluding skin and bones.
<br />chicken, breast, USDA Grade A, to yield 3 oz. cooked edible
<br /> portion excluding skin and bones.
