February 25, 2002 Page 291 Food and Beverage Proposal Mr. Chappuis reported that Food and Beverage is the single biggest component in the revenue stream for the Expo. He recommended that the County hire an outside food service management company to handle the Food and Beverage operation. This could also include the upfitting of a kitchen at the facility by the company. Mr. Clifton discussed the issue concerning the availability of alcoholic beverages at the Expo facility. He proposed that alcohol be served only as a part of a catered meal event with the food service provider (caterer) to have the liquor license and be responsible for serving the alcohol. Further, he reported that Volume Services America (a large food service provider) has estimated a 46 percent impact on revenue if alcohol cannot be served at the facility. This estimate was based on the company's comparison of four similar facilities. 'There was brief discussion concerning liability issues associated with the serving of alcohol. Commissioner Privette asked for a delay in considering the Food and Beverage proposal to allow time for him to discuss the issue with officials in the State Attorney General's Office. UPON MOTION of Commissioner Privette, seconded by Commissioner Fennel and unanimously carried, the Board postponed the Food and Beverage Proposal for the Expo until the March 18tn meeting. Recess of Meeting There being no further business to come before the Board, Chairman Freeman recessed the meeting at 10:52 p.m. until 5:00 p.m. on Monday, March 11, 2002, at which time the Board will meet at the Governmental Center Parking Garage to travel'by van to the Expo site. After the tour of the Expo project, the Board will meet at 6:30 p.m. with the Mecklenburg County Board of Commissioners for dinner at the Union Street Bistro, 48 'A Union Street, South, Concord. In the event of rain, the trip to the Expo site will be cancelled. Clerk to the Board
