If Caterer fails to deliver adequate amounts of food as ordered, the Purcbn.~_r may request that any omissions in delivery be provided by the caterer. If there is insufficient time for the Caterer to deliver the omissions on the same day before serving time, then the Purchn~-er shall have the right to purchase the c~,~arable food items from another source and to receive an amount of reimbursement or credit on the Caterer's invoice equal to the Purcba-~_r,s expense for obtaining these food items. If the shortage or omission cannot be made up by the Caterer by serving time on the same day and if the Program is not able to purcba.~e the needed food items, then the shortage or omission of the specific food item (meat, vegee~ble, bread, dessert or milk) will constitute a shortage of entire meal(s) and the cost of these meals may be deducted from the Caterer's bill accora~ngly. Cost of the meals shall be the contract price including ~x plus total administrative expenses figur_~__ per meal. This cost shall be the total unit cost established in the Invitation for Bid Proposal submitted to Centralina Council of Gove~,~nts by the ~_barrus County Depak U~nt of Aging. Meals shall be prepared under properly controlled temperatures. After preparation of meals, they must be packaged, delivered to sites for consolation within thrcc hours. Caterer will take and record temperatures of food before it is placed in the holding equipment. Recorded temperatures will be kept on file until the end of the contract period and made available to the Purcba~_r for review. Assembled meals shall be held in properly refrigerated and heated ar~n~ that ~t sanitation standards. ~ne Caterer will be responsible for maintaining hot foods at 140F degrees or above, and cold foods at 45F degrees or below during delivery. All meals must be delivered to all sites in Cabarrus County between 9:30 A.M. and 11:30 A.M. If the time schedule is not met by twenty minutes, the Program may purcbn-~e meals from an alternate source and charge the meal cost plus relat~ expenses to the Caterer. Alternately, the Program may elect to accept meals delivered more than twenty minutes late to a site, but Purcbn.~_r shall only to pay for the number of meals that can be served to the Program participants still in atten~nnce at the time of meal delivery. If meals are delivered too late to meet DOA guidelines within the thru_ hour preparation limit, purcbn~_r will not be obligated to pay for any meals for any day that shall
