REPORT ON JAIL FOOD SERVICE
FISCAL YEAR 1991

The Cabarrus County Jail Food Service operated the entire
fiscal year. It operated seven (7) days each week during the year.

During the 52 weeks of operation the Food Service has
served the following numbers of meals:

Breakfast 37,619
Lunch 37,880
Dinner 37,245

The total dollars spent on food during the 52 weeks is
$73,693.40 and the total labor cost for the operation of the Food
Service has been $107,735.58. The labor cost includes salary,
benefits, etc.

The total cost for food and labor for the 52 weeks is
$181,428.98

We do not have a current private contractor bid price to
use for comparison purposes. The last bid we took on the food for
the Jail was in late June of 1989 prior to the opening of the Jail
Food Service. This bid was for a total of $6.29 for the three
meals delivered to the jail. The breakdown was $1.29 for
breakfast, $2.50 for lunch, and $2.50 for dinner.

I doubt very seriously if we could get a bid as low as this
today if we had to bid the food contract out and if we did I would
be very concerned about the quality of the food items they would be
providing.

If we use the FYg0 food bid prices and multiply it times
the numbers of m=als we are currently serving we can make ~ome
valid comparisons between what the food service is accomplishing
daily population in the jail would
and
what
the
increase
in
do to contract costs verses jail food service costs.

Breakfast 37,619 X $1.29 = $48,528.51
Lunch 37,880 X $2.50 = $94,700.00
Dinner 37,245 X $2.50 = $93,112.50

Total Food Service Cost 181,428.98

County $ 54,912.03
Savings
to
Cabarrus

During F¥9! the Cabarrus County Jail Food Service fed an
average of 102.96 inmates three meals per day at an average cost of
$1.96 for food supplies.
